Melissa caught up with Nock's master distiller Daniel Popolizio at Auténtica Tequileria for a chat about his process to make Nock Tequila so special. Here's what he had to say.
It is a tequila that preserves the authentic traditional process of making tequila with a special selection of the best agaves from the valleys and highlands of Jalisco that allows you to have a wide aromatic range with the terroir of both areas; with slow cooking in autoclaves, natural organic fermentation and a traditional double distillation process.
Technical specifications are established that are reviewed punctually during the process for compliance; that allow us to guarantee not only the quality of the product but also the development of the organoleptic parameters that are sought for the profile.
Nock has become a tequila without additives and wants to offer quality tequila at a price that can be enjoyed by most people.
No; Auténtica Tequilera is characterized by maintaining products that preserve the traditional purity of the tequila making process and Nock transmits that essence with the aromatic range in the glass that naturally highlights each of the processes that led to its production.
How did you become a master distiller?
I have been in the industry for almost 16 years and at first I started in the quality area and I was able to learn technical factors that made me understand what it means to comply with specifications that were expressed in quality. Then I began to get involved with each of the tequila making processes not only from the technical point of view (that is, what the books say) but from the people involved who with their experience lived their expertise every day (empirical knowledge) and finally meeting great tequila masters who transmitted to me that passion and respect for the tequila making process.

Having my own educational workshop for developing profiles and knowledge of the tequila making process; I mean creating a new generation of master tequileros who understand the why of the processes and how all the factors are involved in the generation of aromatic ranges for the final design of a profile.
An intimate coexistence between friends where the versatility of thoughts, ideologies, tastes, etc. is united by smiles and laughter while enjoying a glass of tequila.
Doing what I like, making tequila is not a job for me. It is a passion and I enjoy it to the fullest.
